Welsh Tea Cakes

Mix together thoroughly:

1          -           cup                  soft butter

1          -           cup                  sugar

1          -           teaspoon          vanilla

2                                              eggs

1          -           tablespoon       sweet milk

3                      cup                  flour

 -          3/4       teaspoon          salt

-           1/2       teaspoon          baking soda

1          1/2       teaspoon          baking powder

1          -           cup                  currants

 

A)  Mix all ingredients together.
B)  Roll and cut into 1/4” thick cakes.
C)  Fry in frying pan at 300° or more.
D)  Grease frying pan the first time.
E)  Alternatively, bake on baking sheet at 350°, 4-5 minutes on bottom rack, then 2-3 minutes on top.

This is a traditional tea time treat served in Wales. It is provided by Nancy's mother Dorothy, whose grandparents came from Wales and passed this recipe down.
